We all clearly have been going through a lot of changes within the past two years, and a change in your working environment might be one of them. Working from home is still prevalent with the majority of my clients, and while this comes with some tough adjustments, I have found that it does have some benefits regarding their health. The main one is that we are able to implement a workable plan for a REAL lunch. Below I’ve provided some quick bowl ideas that minimize prep time and you can work while they cook. All contain balanced macros and quality nutrients to fuel your day.
Salmon, Cucumber, Feta Rice Bowls
This one is inspired by the recipe by the Cucumber Feta Salad by What’s Gaby Cooking, but made into a protein and fiber-filled meal. This recipe contains Banza‘s new (ish) rice product, increasing the protein and fiber in your typical rice.
Ingredients:
- 4-6 ounces salmon
- 1 tbsp. butter
- Fresh dill
- 1 sliced lemon
- 2 tbsp olive oil
- Banza garlic olive oil rice
- 1/2 cucumber, sliced
- 1/4 shallot
- 2 cloves garlic
- 1/2 avocado
- 1 tbsp. feta cheese, crumbled
Directions:
- Preheat oven to 350 degrees F. Place salmon on a large sheet of aluminum foil. Add butter, dill to taste, and 1 slice of lemon. Seal all sides of aluminum foil, fully enclosing the salmon. Cook for 12-14 minutes.
- While salmon is cooking, slice cucumber, avocado, shallot, and garlic cloves. Add together and top with dill, lemon juice, olive oil, and crumbled feta.
- Bring water to boil and cook rice per package instructions.
- Combine all together & enjoy!
Taco Bowls
A classic that most people enjoy, but again using Banza rice to increase the fiber and protein. Feel free to sub the beef for turkey or a meat alternative based on your preferences.
Ingredients:
- 4-6 ounces grassfed beef
- Trader Joe’s taco seasoning
- Banza chipotle tomato rice
- 1 cup spinach
- 1/4 cup cherry tomatoes
- Cilantro
- 1 lime
- 1/2 avocado
- 1 clove garlic
- 2 tbsp. sliced red onion
Directions:
- Cook grassfed beef in skillet on medium with 2 tbsp. of taco seasoning until fully cooked.
- Bring water to a boil and cook the Banza rice per package instructions.
- Smash 1 avocado, add chopped garlic, lime juice, and sliced onion.
- Slice cherry tomatoes.
- Bring together spinach, rice, tomatoes, smashed avocado and meat and enjoy!
Wild Rice Chicken Harvest Bowl
This one is a Sweet Green copycat, using convenient rotisserie chicken and Trader Joe’s frozen wild rice. You can sub Banza rice for more protein and fiber if you choose.
Ingredients:
- 4-6 ounces of shredded rotisserie chicken
- 1 cup Trader Joe’s frozen wild rice
- 1 cup kale
- 1/2 apple
- 1/2 cup diced sweet potato (Trader Joe’s has this precut)
- 1 tbsp. goat cheese
- 1-2 tbsp. Trader Joe’s Balsamic dressing
- 1 tbsp. slivered almonds
- 2 tbps. olive oil
- Garlic powder to taste
Directions:
- Preheat oven to 400 degrees F. Place sweet potatoes on a foil wrapped baking sheet and bake for 15 minutes.
- Saute kale in olive oil. Add garlic powder to taste.
- Dice apple and set aside.
- Cook rice per package instructions.
- Add in rice, chicken, goat cheese, kale, apples, and balsamic vinegar to a bowl. Enjoy!
