This recipe is inspired by the Shrimp Tacos with Avocado Crema by Carolyn Casner. These shrimp tacos are full of flavor and color and also a great source of protein, carbs, healthy fats, and fiber. These nutrients play a vital role in balancing blood sugar which helps to keep our brain healthy, our energy levels stable, and our mood balanced and support long term health!
Ingredients:
Tacos:
– 1 pound large shrimp (21-25 count), peeled
– 2 cups red cabbage, sliced
– ½ cup carrot, shredded
– 1 tsp. chili powder
– 1 tsp. ground cumin
– 1/8 tsp. salt
– 1/8 tsp. ground pepper
– 2 tbsp. cilantro
– 1 tbsp. avocado oil
– 8 corn tortillas
Avocado Crema:
– 1 medium avocado
– ¼ cup sour cream
– ½ cup cilantro, chopped
– ¼ tsp. lemon juice
– 1/8 tsp. salt
– 1/8 tsp. ground pepper
Directions:
1. Mash avocado, then add sour cream, cilantro, lemon juice, salt, and pepper and mix thoroughly.
2. Toss shrimp, chili powder, and cumin together in a medium bowl. Heat oil in a nonstick skillet over medium-high heat. Add the shrimp and cook for ~3-5 min until cooked through.
3. Spread avocado mixture over one half of each tortilla. Top with shrimp, red cabbage, carrot, and cilantro. Add fresh squeezed lemon or lime for extra flavor!
